I’m back! It’s been CRAZY. I moved to a new city, started a new job (which is FAB! I love it!), and it’s been a whirlwind. The house is on the market (I will show you all pictures this weekend, I pinky promise), and I hope it sells soon.
It’s odd having to come home and be by myself, so I’ve had to cook for myself. I enjoy really simple meals that don’t take too long because after a long work day I want to have dinner on the table fast.
Since I’m cooking for one, I decided to whip up an EASY new game day inspired recipe for football/grilling season. I will definitely make these sliders part of our Sunday football menu because they’re sticky, cheesy, gooey and yummy.
These BBQ chicken jalapeño cheddar sliders are perfect on their own (I eat three and am so full!), or you can pair them with some potato salad, baked beans, grilled corn, etc. Keep it simple or get fancy…do your thang.
The KING’S HAWAIIAN jalapeño dinner rolls are the perfect vessel for sliders. They have that sweet taste you expect from KING’S HAWAIIAN bread with a flavor kick of jalapeño. A few minutes in the oven makes the rolls soft and delicious. Once you add in some grilled chicken and generous amounts of their Original Sweet Pineapple BBQ Sauce, you have a flavor explosion. The BBQ sauce is so perfect — not too sweet and the texture from the pineapple makes it a gourmet treat.
So, let’s dig in!
Kings Hawaiian BBQ Chicken Jalapeno Cheddar Sliders
Servings: 12 Sliders
-2 pounds of thin sliced chicken breast
-1 package of KING’S HAWAIIAN Jalapeño Dinner Rolls
-1 bottle of KING’S HAWAIIAN Original Sweet Pineapple BBQ Sauce
-Shredded sharp cheddar cheese
Step 1: Generously season chicken breasts with salt and pepper on each side, and grill for 4-6 minutes on each side. I grilled mine on the stove using some good quality olive oil. Set aside once they’re done (don’t cut into them immediately!)
Step 2: While the chicken is grilling/resting, place rolls in oven heated to 350-degrees for about 3-4 minutes until warm.
Step 3: Take the rolls out of the oven and slice them in half. Apply some BBQ sauce onto the bread.
Step 4: Slice chicken breast into bite size chunks, toss/coat in BBQ sauce, place onto bread and top with cheese. Pop into oven for a few minutes (2-3) to melt the cheese, if desired.
Step 5: Top with pickles or extra jalapeños. Dig in and enjoy!
I headed to HEB since that is a one-stop shop for all my grocery needs, and they have the best specials/coupons. My fave are the Combo Locos because you buy an item and get one free, and the KING’S HAWAIIAN rolls, bread, and BBQ sauces are part of several Combo Locos through the month of September. And even if you miss out on this deal, the prices are still great. From food to drinks to desserts, HEB has it all.
Hopefully this super quick and easy recipe will make your game day menus a breeze, or you could make this as a weeknight meal like I do and enjoy them for several meals. I’m going to have to make some hamburger sliders using KING’S HAWAIIAN Smoked Bacon BBQ sauce when Pee Wee and Daniel come visit.
