I think we can all safely say that bacon and eggs is a yummy flavor profile that most of love for breakfast, right? Especially on a flour tortilla topped with gooey cheddar cheese (yum…breakfast tacos)
But what would you say if I added in some French’s 100% Natural Classic Yellow Mustard to the mix? You’re probably thinking I am nuts, but bear with me. During summer BBQ’s, everyone needs something to munch on while the meat is cooking. Or as summer winds down maybe you’re looking for some quick lunch ideas for you or the kiddos. I’ve got ya covered thanks to some goodies and inspiration that the kind folks from French’s sent to me. I was tasked with creating a tablescape or a tasty summer dish. I chose the latter because I love food. 🙂
So, let’s make some bacon cheddar egg salad. We’re taking plain ol’ egg salad and making it a star. My original recipe idea called for jalapeno, but I thought it overpowered the bacon so I scrapped that and added in some cheddar because there was no way I was getting rid of the bacon. Best decision ever. This protein packed treat is bursting with flavor, and it’s definitely made for those of you who love mustard more than mayo (me!!)
I’ve always loved French’s 100% Natural Classic Yellow Mustard on hot dogs, cheeseburgers, and even sausage wraps…but all that entails is me squirting some mustard on a bun. In this recipe, mustard helps bind all the ingredients together and adds a flavor boost to create the perfect summer appetizer (or lunch). French’s Classic Yellow Mustard is a great way to add extra flavor to salad dressings, sandwiches, marinades, etc. because while it adds lots of flavor, it doesn’t add a ton of calories (it has ZERO calories, y’all) or fat. Plus, it’s 100% natural so you can feel good about what you’re eating—no preservatives, fillers, or thickeners.
Bacon Cheddar Egg Salad Recipe (Serves 6-8)
-8 hard boiled eggs (spoiler alert: I buy them already hard boiled from the deli section to save time)
-1/3 cup of mayo
-2 tbsp of French’s 100% Natural Classic Yellow Mustard
-6 slices of center cut bacon, cooked and crumbled
-1/2 cup of finely grated cheddar
-1/4 tsp paprika
-Salt and pepper to taste
-Lightly salted pita chips
1. Chop the boiled eggs and put into a bowl.
2. Add in mayo, French’s mustard, cheddar, and paprika to chopped eggs.
3. Add in salt and pepper to taste.
4A. If you’re serving this as an appetizer or in a party, put egg salad into ramekin and top with crumbled bacon pieces (like I did in photo above). Serve with pita chips, crackers, or crostini.
4B. If you’re using this in sandwiches or for lunch, mix in bacon pieces. (Note: this recipe is easily halved or quartered to make smaller batches)
That’s it! This recipe is so easy, and it’s perfect for those hot summer days when you don’t feel like cooking, but want to eat something tasty. I told you bacon, eggs, cheese, and mustard could taste good together, and the pita chips add a bit of crunch and complement the bacon really well.
