With the holiday season in full swing I wanted to showcase a two-in-one recipe and tablescape tutorial designed to save you time and money while still providing a ton of holiday sparkle for your table and tummy!If you’ve never tried the epic Coca-Cola® Easy as Cake! Recipe which mixes 12 oz. of Coca-Cola® with a box of cake mix, boy you are missing out. It is seriously the easiest recipe on the planet, and you can do this with any flavor of cake mix. I promise you the cupcakes are moist, delicious, and you truly can’t tell the difference from using this method or using the traditional water/eggs/oil combo. I picked up everything I needed for my cupcakes and tablescape at the Dollar General store around the corner from my apartment, so I was able to easily avoid having to go to the grocery store!
Here’s what you need to create my very festive and merry funfetti and cream cheese cupcakes:
Servings: Makes 12-14 cupcakes-12 oz. of Coca-Cola®-1 box of Funfetti Cake Mix-6-7 Peppermint Sticks snapped in half-Festive red/green chocolate candies-1 tub of cream cheese frosting-Mini Bows (one for each cupcake)Directions:-Preheat oven to the temperature stated on the cake mix box. In my case, 350 degrees.-Mix together all the cake mix and Coca-Cola® in a bowl. It’ll fizz up a bit initially.
-Grab a cupcake baking tin and liners and pour in about three heaping tablespoons into each cup (about 2/3 full)-Bake according to package instructions (about 19-23 minutes)
Icing & Decorating:
-Once they’re done baking, let them cool for about half an hour before icing-Use a butter knife to apply cream cheese icing
-Top with festive chocolate candies
-Stick half a peppermint stick (they easily snap in half) in the center
-Apply some of the icing on the back of the bow (do not remove the sticker paper on the back) to adhere it to the peppermint stick
You end up with a seriously cute cupcake that’s shiny, tasty and required zero cake decorating/baking skills!
Now, let’s use these beauties to create a simple and functional tablescape.Supplies:-12-14 Very Merry Cupcakes-Tiered server-16-20 mini ornaments-Tray-6-10 large ornaments-Small tealight holders and tealightsDirections:-Grab a large tray and place a tiered server on it. This makes your tablescape easily portable!-Place your cupcakes on the server to allow guests to easily grab cupcakes from any angle
-Fill in the gaps using small ornaments (I chose red and white to play off my mini Coca-Cola® cans)-Use larger ornaments to fill in the rest of the tray and adorn with a few tealight candlesThis looks so pretty from any angle, and it’s a way to have a tablescape that serves a purpose, which is essential for small spaces. I put my cute tiny Coca-Cola® in the tray as well so people can grab a cupcake and some Coca-Cola®!
The metallic mini-bows beautifully reflect the light and the addition of the peppermint sticks in the cupcakes adds a whole second treat within a treat, right?
